Blueberry Muffin Recipe

Here is one of my favorite muffin recipes. I have several. My kids love my muffins, and they hold a lot of special memories. I hope you make some memories as well.

Blueberry Muffins

Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon of salt

1/2 teaspoon of cinnamon

1-1/2 cup of blueberries

2 large eggs

1 cup of sour cream

1/2 cup of sugar

1/4 cup of oil

1 teaspoon of vanilla

Heat oven to 400 degrees. Grease muffin pan or use paper liners.

In a large bowl, mix together the flour, baking powder, salt, and cinnamon. Toss blueberries in this mixture. This will prevent the berries from sinking to the bottom of the muffins. In another bowl add the rest of the ingredients and mix well. With a large spoon, make a hole in the center of the dry ingredients, and slowly add the wet ingredients from the other bowl. Fold over gently to combine. Spoon mixture into prepared muffin pan, filling each to 3/4 full. Optional: sprinkle muffins with additional sugar.

Bake for 20 minutes or until muffins are golden.
